Orange Yogurt Muffins

Ingredients

Muffins

  • 1/2 c Butter melted
  • 1 c Sugar
  • 3/4 c Greek Yogurt
  • 1/2 tsp Salt
  • 1 tbsp Baking Powder
  • 2 lg Eggs
  • 2 tbsp Orange Zest
  • 1/2 c Orange Juice
  • 3 c Flour

Glaze

  • 1 c Powdered Sugar
  • 2-4 tbsp Orange Juice

Instructions

  • In a large bowl, combine the butter, sugar, yogurt, salt, baking powder and eggs. Beat on high until smooth. Add orange zest and orange juice, beat well. Stir in the flour until well incorporated.
  • Pour batter into a 12-count muffin pan lined with cupcake papers. In a preheated oven at 350°F, bake for 25-28 minutes.
  • After removing from the oven, allow muffins to cool on a wire rack. In the meantime, prepare the glaze.
  • In a small bowl, combine the powdered sugar and 2 tablespoons of orange juice. Stir together. It will seem as if there is a disproportionate ratio of powdered sugar to juice. The sugar will eventually dissolve and liquefy. Add small amounts of orange juice to the sugar and continue until you have a dripping consistency. Avoid adding more than 4 tablespoons of orange juice. This will likely result in a glaze that is too thin.
  • Drizzle the glaze over the muffins and enjoy!
